Rainbow Cake

Makes one 9-inch-round six layer cake


3 cups all-purpose flour
4 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, room temperature
2 1/3 cups sugar
5 large egg whites, room temperature
2 teaspoons pure vanilla extract
1 1/2 cups milk, room temperature
gel food coloring: red, orange, yellow, green, blue and purple


1]   Preheat oven to 180 degree celsius. Brush six 9 inch pans with shortening. Line bottom of each pan with parchment paper, brush again and set aside.

2]   In  a large bowl, whisk together flour, baking powder and salt. Set aside.

3]   In the bowl of an electric mixer fitted with paddle attachment, cream butter and sugar. Slowly add egg whites and mix until well combined. Add vanilla and mix until fully incorporated. Add flour mixture and milk in two alternating additions, beginning with flour and ending with the milk. Mix until well combined.

4]   Divide batter evenly into 6 medium bowl. Color batter. Pour batter in each pan. Bake for 15 minutes.

5]   Let each cake cool.

6]  Place the purple layer on the cake plate. Spread a scant 1 cup buttercream filling over the first layer. Repeat process with blue, green, yellow and orange layers.

7]   Place the red layer, bottom side up. Cover the top and sides with a thin layer of frosting (crumb coat). Refrigerate for about 30 minutes.

8]   Using an offset spatula, cover cake again with remaining frosting.

For her romantic parents

This love shape red velvet cake was made for my friend, Faizah, for her romantic parents on their 28th Wedding Anniversary. I purposely chose ivory color for the whole cake board cover to bring out the sweetness in her (for such sweet thoughts for her parents on their special day!) and to make the roses stand out! The maroon roses were made with her Mom in my thoughts as she gave me a hint that the Mom loves maroon! And the cake board was decorated with patchwork garden theme as her father loves  gardening.

Castle Cake, Sugar Cookies and Cuppies for Ikin

Happy Birthday Ikin
Today (17th August) is Ikin's 8th birthday. Somehow this cute little girl has a special place in my heart. I made this Castle Cake especially for her. Thank you to CakeJournal Tutorial on how to make this gorgeous jaw dropping cake and made Ikin a very happy girl on her birthday!

I took 3 days and 2 nights to finish the cake and knew that it was a bit challenging (but can do done) to deliver happiness to a small girl!

 And the accompanying Cupcakes with a little crown topper!

Football cake

This order came in in the last week of the fasting month. It came from a lawyer friend in a nearby town called Muar. It is about 70km away from where I live. And I gladly accepted this order for friendship sake!

And I made Vanilla-Lemon butter cake with Lemon Butter Cream frosting and covered the cakes with fondant. It was a bit tricky to cover the whole ball with fondant as there were actually two different sizes of shapes used for the ball, hexagon and a five sides shapes!

Maroon and Cream

These were ordered by Ms Azrin for her younger sister's engagement on 30th May, 2013. She asked for maroon colored roses and pink and cream color filler flowers. The cake is Red Velvet. I made 16 of these and a plaque.

 This time, the wordings are different from those traditional "Mr So and Miss So, Happy Engagement Day" or "Mr So and Ms So, congratulations on your Engagement!". Azrin indicated that she does want something unusual different from the normal greetings. And I couldn't think of anything more apt than these romantic quote/wordings!

 And to see that big smile on her face when she saw these, is priceless! I really hope that the sister likes this design!
